Homemade Chocolate Covered Popcorn

IMG_1996Ingredients:

1/3 cup popcorn kernels

1/4 Semi-sweet Chocolate

3 tablespoons of oil

salt optional

butter optional

This basic snack is a old favorite of mines. I always find myself randomly buying chocolate, caramel & even cheddar covered popcorn. The list of tasty favor goes on & on! I get into a daze when I think about all the delicious covering options that could coat these little kernels. Its 1 of the best snacks to munch on (when your not on a strict diet). Excuse me, lets not spoil things by talking about freak’in diets.

I like to enjoy being fat sometimes and indulge in some sweet rewards but I do try to resist the urge to buy multiple bags especially when Popped Republic comes cruising around downtown.

With no popcorn food truck around or the desire to go to the store. I decided to make my own batch of covered delight. I’ve made this snack own my own several times but never remembered to share with you guys. FYI: My batch equaled out more because I did 1 cup instead of 1/3 cups. Which was enough to share with others and save for later. 😐

I used organic popcorn kernels and ghirardelli semi-sweet chocolate chips

Heat 3 tablespoons of oil in pot/pan (test heat by dropping 2-3 kernels in oil) if ready pour remainder kernels in pot/pan cover and continuously shake(picture appears more darker but the inside of the popcorn should be a nice golden color

To temper the chocolate I boiled 1-2 cups of water in a small pot. Then placed my saucepan on top of the pot(you do not want the water to touch the saucepan because the chocolate might burn) I placed a piece of saran wrap in the sauce pan before adding the chocolate for clean up purposes (I WAS BEING LAZY) & as my makeshift frosting tube to drizzle the chocolate on the popcorn.Once chocolate starts melting stir every few seconds until smooth. Remove & cut small hole

I lightly salted then drizzled the chocolate

Let harden & Enjoy!
I cooled mines in the fridge for 3-5 mins
